Avocado Cotto Uovo
1 Ripe Avocado
(Not over-ripened)
Black Pepper
Pinch Minced Garlic
1 Slice Bacon
2 Large Eggs
Balsamic di Modena
Sea Salt

Preheat oven to 450 degrees.
Prepare slice of bacon using your preferred method. Cut cooked bacon into small pieces using kitchen scissors and divide in half.
Cut avocado in half and remove stone.
Make thin slice on bottom skin side of each half to keep sections flat while baking.
Drop pinch of minced garlic into the “well” of each half
Preheat oven to 450 degrees.
Prepare slice of bacon using your preferred method. Cut cooked bacon into small pieces using kitchen scissors and divide in half.
Cut avocado in half and remove stone.
Make thin slice on bottom skin side of each half to keep sections flat while baking.
Drop pinch of minced garlic into the “well” of each half
Place equal amounts of bacon into each well.
Pepper each half generously.
Crack each egg into small ramekin.
Place avocado halves into baking dish.
Gently pour an egg into center of each avocado, on top of bacon.
Add a few drops of balsamic over each egg.
Bake in upper oven approx. 20 minutes or until egg is done to your personal preference.
Sprinkle each with sea salt before serving.
Serve immediately.

NOTE
I prepared my eggs sunny side up and broke the yolk to enjoy the dish. Bits of avocado at the bottom of the half worked well to soak up the escaped egg yolk left on the plate.
