SOUFFLE DI PATATE DOLCI
(SWEET POTATO SOUFFLE)

SERVES 10 - 12

6 - 8 MEDIUM SWEET POTATOES (YAMS WON'T WORK)
1/2 CUP UNSALTED BUTTER
1 CUP LIGHT BROWN SUGAR
2 LARGE EGGS -  SEPARATED
1/2 SHERRY
1 TSP. NUT MEG

BOIL SWEET POTATOES IN UNSALTED WATER UNTIL JUST TENDER

COOL, PEEL AND THEN SMASH WITH HAND POTATO MASHER OR USE RICER

CREAM SOFTENED BUTTER, BROWN SUGAR AND EGG YOLKS TOGETHER

ADD SHERRY AND NUTMEG AND MIX WELL BY HAND
ADD MIXTURE TO SMASHED POTATOES

STIFFLY BEAT EGG WHITES AND GENTLY FOLD INTO POTATO MIXTURE

POUR GENTLY INTO A GREASED BAKING DISH AND BAKE AT 350 DEGREES FOR 30 MINUTES
