RIMASTO HAM AL FORNO

(LEFTOVER HAM BAKE)

THIS IS A RECIPE I CREATED MANY YEARS AGO WHEN I WAS TRYING TO COME UP WITH NEW WAYS TO USE LEFTOVER SPIRAL CUT HAM AFTER HOLIDAYS.

AFTER ALL THE SLICES ARE ENJOYED THERE IS ALWAYS LOTS OF GREAT MEAT REMAINING THAT IS  ATTACHED TO THE HAM BONE.

THIS HAS BECOME A FAMILY FAVORITE

LEFTOVER SPIRAL CUT HAM BONE
1/3 CUP EXTRA VIRGIN OLIVE OIL
1 CUP CHOPPED ONION
3/4 CUP CHOPPED GREEN BELL PEPPER
1/4 CUP UNCOOKED RICE
1Q TSP. SALT
1/2 TSP. PEPPER
1 LB. 12 OZ. CAN SAN MARZANO TOMATOES (CRUSHED)
1 7 OZ. CAN PITTED BLACK OLIVES
1 BAY LEAF
2 1/2  CUPS HAM CUT FROM BONE, FAT REMOVED AND CUT INTO BITE SIZED CHUNKS

MIX ALL INGREDIENTS IN A LARGE BOWL

POUR INTO A TREATED CASSEROLE DISH

COVER AND BAKE AT 350 DEGREES FOR 1 HOURS AND 15 MINUTES

REMOVE BAY LEAF, STIR AND SERVE

SERVES 6

 IF YOU HAVE LOTS OF LEFTOVER HAM IT'S EASY TO DOUBLE THIS RECIPE AND BAKE IN AND 11" BY 7" BAKING DISH

ADD AN ADDITIONAL 15 MINUTES BAKING TIME
