GREEN PEA FLAN

SERVES 4

3 OZ. GREEN PEAS (IF FRESH - COOK FIRST)
2 EGGS
6 OZ. CREAM
2 OZ. GRATED PARMESAN CHEESE
1/4 TSP. GROUND NUTMEG
SALT & BLACK PEPPER TO TASTE
1 TBS. UNSALTED BUTTER


WHISK THE EGGS & CREAM TOGETHER IN A MEDIUM BOWL.  ADD NUTMEG, PARMESAN CHEESE, SALT & PEPPER TO TASTE.  GENTLY FOLD IN THE PEAS.

BUTTER INDIVIDUAL BAKING FORMS.   IF YOU DON'T HAVE INDIVIDUAL FORM YOU CAN ALSO USE A MUFFIN TIN.

 FILL 2/3 FULL WITH MIXTURE.  PLACE BAKING FORMS/MUFFIN TIN  INTO SHALLOW BAKING PAN WITH A SMALL AMOUNT OF WATER IN BOTTOM.

THIS IS CALLED "BAGNA MARIA"

BAKE AT 350 DEGREES FOR 20 MINUTES OR UNTIL GOLDEN ON TOP.  ALLOW TO SET FOR 5 MINUTES BEFORE INVERTING ONTO SERVING DISH OR PLATTER.

 SLIGHTLY SAUTEED MUSHROOMS CAN BE SUBSTITUTED FOR PEAS.
