COARSE SALT POTATOES

SERVES 4

4 SMALL WHITE POTATOES
COARSE SEA SALT
BLACK PEPPER TO TASTE
OLIVE OIL
1 OZ. CHOPPED FRESH PARSLEY
SALT TO TASTE

PLACE COARSE SEA SALT IN THIN LAYER TO COVER BOTTOM OF SHALLOW PAN.

CLEAN BUT DO NOT PEEL POTATOES.  PLACE ON TOP OF COARSE SALT AND BAKE AT 375 DEGREES FOR 30 - 40 MINUTES, UNTIL BAKED.

WHEN FULLY BAKED STAND POTATO ON END AND DO A CRIS-CROSS CUT AND PRESS TOP OPEN.  TOP WITH SALT AND PEPPER TO TASTE, PINCH OF FRESH PARSLEY AND A FEW DROP OF OLIVE OIL.
