2 CUPS FRESH BERRIES
(USE YOUR FAVORITE BERRY, OR COMBINATION OF 2 DIFFERENT BERRIES)
I PREFER DARK BERRIES
2 & ½ CUPS SUGAR
1/4 CUP LEMON JUICE
PLACE ALL INGREDIENTS IN 4 QUART PAN. BRING TO BOIL OVER MEDIUM HEAT.
REDUCE HEAT AND SIMMER UNTIL BERRIES BEGIN TO DISSOLVE AND MIXTURE BEGINS TO THICKEN. STIR REGULARLY. THIS TAKES ABOUT 15 MINUTES.
POUR THROUGH A FINE STRAINER INTO A BOWL, PRESSING WITH A SPATULA TO RETAIN AS MUCH LIQUID AS POSSIBLE AND DISCARDING ANY SEEDS AND SKIN.
IF TOO THICK ADD A FEW DROPS OF WATER AT A TIME TO THIN . YOU WANT A SYRUP QUALITY.
ALLOW TO COOL.
NOTE: IF FRESH BERRIES ARE OUT OF SEASON, YOU CAN USE FROZEN, BUT YOU MAY HAVE TO INCREASE SUGAR SLIGHTLY .
